fried egg and pesto



here's a super simple brunch idea. fry an egg in one tsp of olive oil. serve it on toast with homemade pesto that has been generously spread all over. garnish with freshly cracked pepper. healthy and so yummy.

Ooh, I would never have thought of combining egg and pesto but that looks yummy. Will have to give it a go.

hi cal,
it's one of those spontaneous combos that i now love! it's best with homemade pesto but i'm sure it will taste just as good on a store bought variety, especially if you make it for dinner on a weeknight.
